Our vision for PDT market is to create a distinctive experience that transports people to another place and in the process transforms our community. We want to be Saratoga’s favorite place to eat, shop and learn–a familiar place that comforts all both inside and out.

... is an authentic collaboration of food and experiences, a place to ‘eat, shop and learn’ in downtown Saratoga, serving our local community. The Market is home to fresh, ready-made food and takeaway meals, groceries, specialty food items, full service bar, a café that doubles as a private event space, studio kitchen, florals, gifts, and more. A celebration of global tastes, PDT Market reflects Chef Foti’s signature French influence throughout our cuisine in addition to featuring an array of locally-crafted products.

Our History

Serving the Saratoga community and beyond for over ten years, PDT Market began as PDT Catering; a premier boutique caterer and lifestyle brand founded by Chef Adam Foti. Short for “Pomme de Terre”, which translates from Old French to “apple from the earth”, PDT is guided by French and Italian heritage and believes that good quality, humble ingredients can be transformed into great deliciousness. PDT Catering provided full service catering for weddings, fundraisers, and social events throughout Saratoga Springs, The Greater Capital Region, and New England at large. We expanded into PDT Market in March 2023, and continue to provide catering services out of our new location.

Chef Adam Foti brings 35+ years of experience, creativity, and authenticity to the table in everything he executes. Foti developed PDT in 2012 after years in the hospitality industry. Prior to this, Foti spent 18 years in the Corporate Retail/Fashion industry as a Brand Director where he created product lines for Old Navy/Gap Inc., Ralph Lauren, American Eagle, and Guess, Inc.

Chef Foti completed his culinary degree at SUNY Schenectady and BBA in Hotel-Restaurant Management at Suny Delhi. He holds various awards for culinary competitions including silver medals from The American Culinary Federation (ACF) and The Societe Culinaire Philanthropique, NYC.  Foti is a Certified Culinarian by the ACF, ServeSafe Certified (Instructor and Proctor), Certified Professional - Food Safety (NEHA), and Registered Rotisseur with the Chaine des Rotisseurs.

Chef Foti loves creating beautiful things and making people happy. He is an Adjunct Instructor at SUNY Schenectady where he teaches a variety of culinary classes.  He lives with his husband and their Labrador Retrievers in Saratoga Springs, New York.
